Pumpkin, Walnut and Ginger Teacake

A perfectly seasonal treat to have with a warming cup of tea and uses the leftovers from that pumpkin carving I hope you are doing!

Ingredients

175g butter, melted
140g clear honey
1 large egg, beaten
250g raw peeled pumpkin, grated
100g caster sugar
50g chopped walnuts
350g self raising flour
1 tbsp ground ginger


Method to the Madness

The first thing to do is create your pumpkin masterpiece!


Preheat the oven to 180c/gas 4/fan 160. Butter up a loaf tin.

Grate the pumpkin you have cut out from the carving.


Mix the butter, honey and egg.


Stir in the sugar, flour and ginger.


Add the pumpkin and walnuts and combine.


Pour it all into the loaf tin and bake for 50 minutes and its done!
